Shrimp Summer Salad with Horseradish Vinaigrette

While not my usual pasta-filled content, this shrimp summer salad with a horseradish vinaigrette will *leaf* you begging for more! 

In honor of National Horseradish Month, I’ve partnered with Silver Spring Foods to celebrate the 50 States of Zing! Silver Spring Foods is the world’s largest grower and processor of horseradish. Inspired by Florida’s oranges, I created this shrimp summer salad just in time to enjoy all summer long! Topped with Florida oranges, strawberries, goat cheese, pralines, grilled shrimp & a horseradish vinaigrette, you will be *leafing* nothing behind. SHRIMP SUMMER SALAD WITH A HORSERADISH VINAIGRETTE

The Vinaigrette

-1/4 cup of oil

-1/4 cup of white vinegar

-3 garlic cloves, minced

-2 tablespoons of @silverspringfoods Non-GMO Horseradish

-1 tablespoon of honey

-salt & pepper

The Salad

-A bowl of mixed greens

-Sliced strawberries

-Peeled oranges

-Goat cheese

-Pralines

-8 shrimp

Grill shrimp until cooked. Drizzle a small amount of vinaigrette over shrimp, set aside. Mix vinaigrette ingredients together in a small bowl, set aside. In a large bowl add greens, strawberries, oranges, goat cheese and pralines. Top with shrimp and vinaigrette.
